Vanilla Cupcakes and Pink Butter Icing

I know it’s not exactly a far-out recipe but that’s why I like it – not much chance of it going wrong (unless I use plain flour like I did last time… And I wonder why they didn’t rise…)
Anyway, I felt like making some cakes today, and thought I’d do a test run before I let Freyja help. They seem to have come out OK! So, here’s the recipe, which makes 12 cupcakes:
Ingredients:
For the Cakes:
100g Butter/Margarine
100g Self Raising Flour
100g Caster Sugar
1/2tsp Vanilla Essence
1/4tsp Baking Powder (optional)
2 x Eggs
For the Icing:
75g Butter
175g Icing Sugar
Few Drops Red Flavouring
Few Drops Vanilla Essence
Method:
- Heat the oven to 160°C (Fan assisted) or 180°C (Normal) – That’s Gas Mark 4
- Mix the butter and sugar until soft and fluffy.
- Add the eggs one at a time, mixing throughly. Add the vanilla essence.
- Sift the flour and fold into the mixture. Add the baking powder if you’re using it.
- Spoon the mixture evenly into 12 cake cases. I use the washable silicone cases, cuz they’re cool, but paper cases are fine too. Chuck them in the oven for 10-20 minutes. Check to see whether they are cooked by poking one with a cocktail stick. If the cocktail stick can be removed with no cakey residue, they are done!
- For the icing, mix the butter until it is soft. Add the icing sugar, vanilla essence and colouring. Mix it all up together.
- Once the cakes are cool, spoon on the icing sugar, or use a piping bag if you have one. Add any decorations you may want to add aswell. Sorted!
It’s an ideal recipe for toddlers to join in and help to make – I’ll be doing the next batch with Freyja, which should be fun! Don’t let them eat the mix though – it’s too good to share.
