Sweetcorn Cakes

I don’t know about any of you guys, but I struggle to be innovative when it comes to making dinners for Freyja. I always end up making the same thing, and to be honest, it gets boring. I’ve been wanting to try out new dishes, but needed inspiration, which is where the Organix recipe folder that they sent me came in. It’s so useful! As is their website, full of recipes for babies and toddlers of all ages.
We tried the Sweetcorn Cakes yesterday evening, and they were a winner – with Freyja, and James and I as well. They are scrummy! The only bad thing is they aren’t suitable for freezing – Oh well, we’ll just have to eat them all then!
Ingredients
275g can of sweetcorn, drained
1 garlic clove, chopped
1/2 small red onion, chopped
2tbsp coriander
100g plain flour
2 eggs
100ml veg oil (for frying)
ground black pepper
Method
- Place half the sweetcorn in a blender and blend until smooth. Add the pepper, garlic, onion and coriander and blend to a puree.
- Add the flour and eggs and blend again
- Scrape the mixture into a bowl, and fold in the remaining sweetcorn
- Heat oil in a frying pan, drop a spoonful of batter into the pan and repeat until you have 3 or 4 in there
- Once golden, flip over and golden the other side
- Serve on their own, or with cream cheese or another topping of your choice

This reciope looks yummy…just wondering if you used coriander powder or fresh coriander?
