Smoked Mackerel Kedgeree

I decided to make something different for Freyja this evening, and I have to say, I was quite impressed with myself. I don’t often get experimental in the kitchen, but thought I’d give it a go, and it turned out pretty well! Freyja scoffed the lot, which is definitely a good sign, especially when she started picking up the bits she’d dropped and eating them too. They just normally get left for the hoover.

I tried my hand at kedgeree. I know it’s traditionally a breakfast dish, but it’s just as good as a dinner in my opinion. The only thing I thoroughly failed on was the egg. I’m not that great at eggs, unless they are fried or scrambled. Boiling an egg successfully is a bit of a sore point. I boiled this one for 10 minutes, and it was still soft. So she had an eggless kedgeree.

Anyway, the recipe in entirety, including the egg, can be found below. It makes 2 decent sized portions, so the other one can be bunged in the fridge for the next day, or gobbled yourself, like I did.

Ingredients

1 fillet of smoked mackerel, skinned and checked for bones
80g rice
2 cardamom pods
1 small onion, diced
64g baby spinach
1/2 teaspoon medium curry powder (or mild, whichever)
1 tablespoon butter
1 egg, hard boiled (!) and chopped up into pieces

Method

- Cook the rice and cardamom pods until soft
- Melt the butter in a pan, and sauté the onions for about 5 minutes
- Add the curry powder and sauté for a further minute
- Add the spinach and allow it to wilt, then add the rice (remove the cardamom pods)
- Add the mackerel (flaked) and serve with the pieces of egg on top

It’s yummy! With or without the egg. I’m going to make more next time, for our dinners as well. Nom nom nom.
